Gain the knowledge of the legislation, registration, licensing and compliance requirements that apply to the operation of food and beverage service establishments. Develop capability in the development of standard operating procedures to support legislative compliance with a particular focus on food control plans, health and safety, host responsibility and maintaining a responsible drinking environment.
On successful completion of this course, students will be able to:
- Relate the application of legislative requirements and local council bylaws to different food and beverage service establishments including operational layout, registration and licensing considerations.
- Explain the requirements of the Sale and Supply of Alcohol Act 2012 and its implications for licensed commercial establishments in relation to host responsibilities and maintaining a responsible drinking environment.
- Review and develop standard operating procedures and food safety programmes for food and beverage establishments to ensure licensing, registration and compliance requirements are met, monitored and maintained.
